Vladimiro Cardenia, is associate professor (Food Science) at Dept. of Agricultural, Forest and Food Sciences - University of Turin (Italy). His research interests are mainly focused on food lipids, especially on their composition, degradations caused by processing and preservation, and their relationship with human health. In particular, he is interested on the following aspects, (i) Food innovation: develop of food technologies and strategies addressed to increase the bioavailability of bioactive compounds in foods maintaining desirable quality and safety also related to gender; (ii) Omics: volatilomics and lipidomics for evaluating food-health interactions;(iii) Authenticity and Food Control: assessing the food and beverages origin as well as develop of novel biomarkers of exposure and susceptibility to process-induced contaminants and chemical hazards.
